DragonBannerSmallOutlinesThe story of Dragon’s Nest began several years ago after years of treatments for various digestive issues including hospitalizations. I tried a gluten-free diet on a trial basis on the suggestion of a friend who suffers from Celiac Disease. Much to my surprise, not only did my digestive symptoms subside, I also found that I had more energy than I had felt in many years. I realized that my body couldn’t handle gluten. I had a gluten intolerance and if I wanted to feel well and be healthy I needed to follow a completely gluten-free diet.

During this gluten-free journey I found although there were many more gluten-free products on the market shelves than ever before. Problem was many of the baked goods just didn’t taste like traditional products. The taste and consistency just tasted different and not in a good way. I wanted and missed gluten more than ever. I always dreamed of owning my own bakery, as cooking and baking have been passions of mine most of my life, so Dragon’s Nest was created. I decided to tackle the challenge of owning my own gluten-free bakery. I developed products for people with Celiac Disease and Gluten Intolerance to enjoy that taste like their gluten laden originals in a safe dedicated gluten free kitchen.

I enjoy working with various ingredients and flavors to create sought after bakery delicacies that are not widely available in gluten-free versions. I started with the two products I missed the most scones and rainbow cookies. Next I worked on various cookies, moist muffins, breads, cakes, cake pops, brownies and product by product slowly expanded my line that now includes rolls and English Muffins.

My customers tell me that my gluten free versions taste just as good if not better than “the real thing.” My philosophy is that people with gluten intolerance should be able to enjoy a delicious bakery indulgence without guilt or sacrifice.

I felt that Dragon’s Nest story was not complete with only offering Gluten Free. I did not want to leave out customers out with other allergies. So I made sure to offer not only Gluten Free, but included Gluten/Dairy Free, Nut Free options as well as Vegan alternatives for many of my products.

My greatest joy is watching a customer’s face light up as he or she tastes one of my products for the first time.
